How do you figure 10/sec? that 30,000 was over several hours (over 10h, as memory serves)... not too much to expect from an active mail server. Also, this particular server does have an edge gateway box that takes most of the load off it. It's at a client's location, but very well maintained.

I've had a lot of Imail clients install IMGate recently due to flakiness in Imail when Imail is overwhelmed by "too many" incoming connections. I don't know what "too many" is, and I bet it varies all of over the ballpark.

I do know that the putting IMGate in front of a flaky Imail ALWAYS stops Imail's flakiness. "flakiness" is a syndrome, not a single symptom.

I expect that the rate of connections is driving Imail SMTPD and friends nutz. good luck. maybe some wizard here can help you with the black magik it takes to cure the patient without IMGate.
