This is quite easy. You can change the name of the host in the registry.
Goto HKLM\ipswitch\Imail\Domains and find your virtual host. You have to
change the value on two places.

After this, restart IMail.

At the end, add your old domain as a host alias.

Are the two places that it needs to be changed outlined in this article?

http://support.ipswitch.com/kb/im-19991007-Dm01.htm

When you say add the old domain as a host alias, is that the box in Imail
administration, on the same page that has all the tabs for the outbound and
inbound rules, when u click on the domain?

Also, for DNS purposes, changing the host name does not affect the name of
the actual server itself. As in, my DNS has an A record for
mail.todhunter.com pointing to the IP address. If I change the OHM to
cruzaninc.com, that won't affect the actual mail server name will it? Or do
I now have to change that to mail.cruzaninc.com?

Sorry if these questions seem silly, I have never done this and I don't want
to hose mail for the company while Im learning.
