Anyway, I emailed the guy and suggested that he use a valid email
address as the sender. He wrote back telling to gray list and use Spam
Assassin, or to white list his sender.

Jerks like this you have to whitelist. The imgate sav reports help identify such servers, reports for servers with/w-o PTR.

accept email from such senders. He wrote back telling me that what I was
doing was unheard of.

BS

verification in their anti-spam process, and whether it is reasonable
for a company to send email using sender addresses that they refuse to
acknowledge as valid.

RFC requires envelope senders, aka "return path", to be valid, so they can receive bounce msgs, etc. There are quite a few legit send-only list servers that fail SAV.

bank/finance newsletters
hotel/car rental/reservation sites
etc

postfix SAV rejects with 4xx when the MX is not responding, not findable, etc, so the send-only server keeps re-trying, and almost all do, giving you the time to verify and whitelist them. But a few are setup so that they do not retry. No return path, no retries, screw 'em.
