You can find their MX records which will let you know which MTAs receive mail and frequently are the same ones that send mail but larger ISPs often have separate incoming and outgoing MTAs. You could also look for SPF records from which you could derive the set of IP addresses the domain states are allowed to send e-mail but there's no requirement to have SPF records.
