I'd try this. Move your instance of 8.05 to the new box. This is a well documented event. Then upgrade the new instance of 8.05 to Collaboration Suite. This would not take a great deal of time and would offer you an opportunity to revert back to the old still in tact server, or pause at the move state and then do the upgrade at a later date.
I'd dry-lab this on a test box first. I just moved an 8.15 instance from an old NT box to a new 2003 Server. It went as documented. So well in fact I worried for about a week that someting was wrong. Very easy.
