I have been toying with similar ideas a while ago. Short of spending significant $ on an SAN system you could put the home directories on a raid1/10. To add extra redundancy. I don't see why it is a bad idea to have imap run on the same server where the homedirs are. If it is because you want to seperate the smtp server and the imap server, you could leave the smtp server seperate and add an smtp smarthost on the imap/homedir server to handle final delivery.
