How long will postfix defer the delivery before bouncing the messages 
back?  Another reason I was interested in doing this, is so I can have a 
mail server running, processing its backlog of messages, leaving it up so 
users can check their mail, while holding off additional mail...

But, postfix does come in handy for mail maintenence...
