I'm not sure if this is quite the answer you are after but how I do that
is to run a local IMAP server and I have Fetchmail collecting mail from
multiple domains and delivering to my users.
Then, IMP, or another IMAP client like Thunderbird, can access the
collective mailbox and get all mail for that user, irrespective of what
domain it was sent to.
There may be an IMP way to do it, as mentioned in your message, but I
feel that separating out these sorts of tasks makes things easier. IMP
is a mail client which acts on an IMAP server, other things, like
Fetchmail and Thunderbird, can also act independently on the same IMAP
server.

What this Horde website FAQ describes is exactly what I am trying to do:

IMP CAN "FETCH MAIL" FROM OTHER ACCOUNTS AND MERGE IT INTO
YOUR INBOX OR OTHER FOLDER(S) DISPLAYED BY IMP. IF YOU WANT TO MANAGE
THEM SEPARATELY RATHER THAN MERGING THEM ALL INTO ONE FOLDER, YOU CAN
SIMPLY CREATE A SEPARATE FOLDER FOR EACH ACCOUNT, AND THEN CONFIGURE
IMP'S FETCH MAIL to download messages for each account to its own unique
folder. Each folder would then represent an account. Using multiple
identities tied to each account's email address, you can set it up so
that when you reply to a message from any given account, the proper
From: address is used.
