I have no idea. HTML email works fine of 4 different iOS devices for me when using EAS 12.1. When forcing the server to use 2.5, they revert back to plain text only (as they should). Be sure you are using the most recent versions of all packages, reset the sync account on the device(s), enable the synclog and try again.
