I would say they are both poor ;-) / quite generic, but have also different 
meaning.

building=residential means any building built for residential purposes (of a 
residential typology), but usually it makes more sense to be more specific (if 
you have the data, for manual mapping usually you can be more specific), like 
detached, house, apartments, villa, terraced, etc.

building=yes is even more generic and includes all types of buildings, and even 
some other structures.
building:use is about the current use of the building and has nothing to do 
with the typology.
