Discourse literally does provide an archive > of this. but it is inconsistent: if you edit within the first 5 minutes, no trace is visible (just in the email others get from your post compared to the forum there is a difference) but if continue editing, the difference between the first version and one after the 5 minutes is shown (but not the intermediate states, IIRC).
