Italian Cream Cake
1 stick margarine
1/2 cup Crisco shortening
2 cups sugar
5 egg yolks
1 cup coconut
5 egg whites (stiffly beaten)
2 cups flour
1 tsp baking soda
1 cup buttermilk
1 tsp vanilla
1 cup chopped nuts
1 container vanilla frosting
In a large bowl, cream margarine and shortening; add sugar and
eggs yolks; beat well. Combine flour and baking soda; add to
creamed mixture. Stir in vanilla, coconut and nuts. Fold in egg
whites. Bake in 2 round greased and floured cake pans for 25
minutes at 350 degrees. Cool before icing with vanilla frosting.
