I was under the impression that a "pkg image-update" would update all

Im kinda confused as to what "pkg image-update" is actually meant to
do. Can
anyone enlighten me ?
It does, sort of. The difference with OpenSolaris is that it's
integrated with the Live Upgrade feature which uses ZFS clones, so it
updates to an alternate boot environment. You'll need to activate the
new boot environment and reboot through beadm(1M). See
http://dlc.sun.com/osol/docs/content/2008.11/snapupgrade/snap3.html
One minor correction: the OpenSolaris 200x distributions don't contain
or use Live Upgrade which is currently only part of Solaris 10 releases.
Instead, OpenSolaris 200x releases use ZFS boot environments.
Cheers,
