In orchids if the fruits open, then for sure seeds are ripe. One thing
about orchid seeds are, they dont have any reserved food as they have no
endosperm and they are dispersed by wind as they are super light in weight.
Seeds may take some time to germinate, but they are always ripe.
You cant compare it with peas. The two big cotyledons in these seeds are
actually the food reserve which provides nurition to the embryo to
germinate, because you actually open the unripe peas or beans because they
are soft and in that stage they cant be planted (usually). You dont usually
wait for the beans to ripe to eat, because they are too hard to cook by
that time.
