 Potassium permanganate [KMnO4] used for washing vegetables could have imparted 
this colour especially if left in contact for a period of time.

Yes, if and when you get to the entire thread, you can see what I wrote in the 
beginning... its absence of proper blanching process that must be maintained in 
horticulture of this vegetable...

AND WHILE we are talking of blanching... those in the west also eat the endive 
in salads, I love it with Peanut butter, THAT IS ALSO BLANCHED during growing 
by a very precise sophisticated timing and process ... ENDIVE is one of the 
chic(/k)ories used for eating raw...  good for the liver  ... among other has 
low level of inulin..  and several bitter alkaloids...
