Generally speaking fewer series with more fields will be more performant. Fewer series means lower RAM needs, and more fields per point means faster writes. Queries will be marginally faster because the RAM index will be smaller.
Note that the current SNMP plugin for Telegraf is likely to be replaced soon. The current maintainer can't keep the project going and there are some breaking architectural changes we'd like to make to that plugin.
