Assuming you have the default install locations this will nuke most
everything but trivial stuff like logrotate configs and man pages:

rm -rf /var/lib/influxdb
rm -rf /var/log/influxdb
rm -rf /etc/influxdb
rm -rf /usr/lib/influxdb
rm -rf /usr/bin/influx*
