Hi Kevin, It's an open issue to enable single database restores: https://github.com/influxdata/influxdb/issues/7758
The next version of the Enterprise product (releasing on January 24th) will enable single shard or database restores: https://portal.influxdata.com/ We'll try to get it into the OSS version soon. It would be there already, but the Enterprise and OSS versions use completely different code for this functionality.
