We have a quite similar approach with ~/Private, ~/Public ..., but
our solution for the ~/OldFiles problem is somewhat different,
because I figured we would have just the problems you describe,
and I decided for another techique before I moved any users.

We mount the user volumes at /afs/z/u/<user>, their backup volumes
at /afs/z/u/<user>.backup. In their home directories, they just have
a symbolic link .BackUp -> ../<user>.backup. This way, du and find
don't dive into the backup volume - (sometimes even recursively),
and due to the dotted name, users are not very likely to see the
backup at all until they call for a restore the first time, and we
can explain the backup volume to them.
