You can save it encrypted in ~/.authinfo.gpg.

Looking at the trace buffer of my last SMTP session, that uses STARTTLS,
too.  I have the credentials for the server in ~/.authinfo.gpg and
didn't setup anything special about how to use STARTTLS...
