Why do I ask: the documentation for 3.10 says 3.6.3 is required.

I'm considering upgrading first to 3.8.1 - taking packages from
snapshot, but that is never as straighforward as it looks.

IIRC I had 3.8 via backports and then 3.10.
Is it possible to install the specific version in your case?
apt supports that
apt install cyrus-imapd/3.8.1-1~bpo12+1

bookworm-backports (mail): Cyrus mail system - IMAP support
3.10.1-3~bpo12+1: amd64 arm64 mips64el ppc64el s390x
3.8.1-1~bpo12+1: armel armhf i386 mipsel

But do it on a test system first and keep a backup of your old installation.
