A friend of mine told me how to do this so I take no credit.

GARY'S SMOKED TURKEY

Fire up a large grill or smoker.
   It's best to use dry hickory and oak wood (soak some of it with water to 
make it smoke)
   with charcoal as a starter, but you can use lots
   of charcoal if you want.

Place Turkey in a Large Brown paper bag.
   Season the beast to taste before placing in bag.
   Add one cup of olive oil (that's right pour it in the bag on top of the 
turkey).
   Fold the top of the bag down to seal.  The type of Bag that was used to 
bag groceries
        years ago.  If you have a Kroger and request it, they will put your 
food in such a bag.

Place on well heated grill or preferably a large smoker.
   The bag will not burn but will turn a dark brown or black.
   My grill usually takes around 3 1/2 - 4 1/5 hours at 185-250 
degrees.  That's just a guess
     but it's pretty hot.  I don't use a thermometer.

Now, the most important thing is baby sit the turkey.  If you leave it you 
will burn the beast.  Besides, if everyone is sitting around the smoker it 
makes for good entertainment.

Results:  The bag is black now and beginning to crack.  You can remove the 
turkey when done and peel the bag off.  The meat will fall off the bones if 
you're not careful.

If you don't like Turkey, get a large hen.

The lower the temp the better, but don't go below 165 and remember the 
lower temp the longer it takes.  NEVER slow cook a turkey all day at 145 or 
lower. And most of all, don't do like my first wife and leave the insides 
inside the turkey, or you may be in for a divorce.

If you have already fixed your turkey this Thanksgiving, then you can still
