Some mail servers reject mail if the headers are not rfc-compliant (and that
from address is certain in that category).  You can also do this when you
receive a message - you get a list of headers and you can check to see if
the address is compliant or not (I have a cfx tag that verifies address
formats and can send it to you if you want).

There are also servers that pay no attention to the format of the headers
(the default for FusionMail).  In that case, the burden is on the client.
Microsoft Outlook Express has no problems with weird headers but other
software, like cfx_iipop3, does.  As I recall, that tag is unforgiving in
the way it processes mail.
