I think that, for redundancy, you need to have a common file server / database server 
for each iMS server to use.  You may also want
webmail (web server) on the same server as the file server.  Here are some additional 
notes for each server:

Pop:

Requires only access to the file server and database server.  You may want to split 
users up between the two servers.

Post

Requires only access to the file server.  If you are using Smart Delivery then it also 
needs access to the database server.  Each
Post server requires a separate queue folder on the file server.  If one server goes 
down then you only need to copy the queue files
to the other folder.

SMTP

Requires access to the file server and database server.  SMTP Servers should store 
messages in separate folders but you can use a
common folder if required.  SMTP servers should both have an MX record with the same 
priority.
