Basically, you need to have the following:
 
1 - secondary server configured in the MX for the domain (as a lower priority)
2 - secondary server has to be configured to forward mail to the primary server.  In iMS this is done in the POST Server "Outgoing Servers" setting.
 
For iMS - you can use either the MX Backup edition or something like iMS SOHO (which would give you the aded benefit of running gthe same app server templates as the primary server).
