Commenting out all the acts_as_ferret lines in the models ought to do it (along with the search boxes in the views, of course).
Sphinx is next on my list. I've been sidetracked with updating Insoshi to use Rails 2.1 (to be released within a few days), since I realized that the longer we went with Rails 2.0 the more painful the upgrade would be. (Alas, it was still very painful; a blog post detailing the carnage is in preparation.) I'm not sure what the exact timeline is, but barring some unforeseen disaster you can count on a Sphinx implementation some time in the next 2-3 weeks.
