I do this in production.

As long as none of the filesystems used by the OS (/, /usr, /opt, /var, zone 
root) are on ZFS you're fine. Any other filesystems such as /home won't get 
touched by LU and will be mounted on boot (as will any UFS filesystems that 
aren't involved with the LU process). 

One problem you might run into (don't know if it's been fixed yet), is that on 
lucreate it may try to copy ZFS filesystems to the other filesystems. You'll 
need to exclude these when doing the lucreate. After you've done an lucreate 
once, just use lurename and lumake (which is smarter about ZFS than lucreate).
