You'll need to use a different installer (ie not the simplified graphical installer in the old SXDE releases). The text mode installer allows far more customization during installation. However, the text installer in previous SXDE releases doesn't allow you to install to a ZFS file system (you would need to use recent releases of SXCE to gain that capability if that's important to you).
