I don't believe you understand the role of the ZIL.  I see no correlation
between the ZIL work and the other ZFS use of the vdevs.  I also don't
see many workloads which a laptop user would run which would use the
ZIL.  The two main workloads are databases and NFS service, neither of
which are commonly used on laptops.

I do believe that ZFS will be much better for CFs than UFS, particularly if
you actually install to the CF (rather than copy an existing installation).
If you get a chance to try it, please let us know how it works for you.
