I don't believe there is, exactly, any maximum resolution at all for chart data. Here's a little bit more on my understanding of how this works. (I'm sure if I get it too egregiously wrong, one of the engineers can correct me.)
In terms of visual resolution, if more than one data point shows up in the same pixel, we draw the range between the highest and lowest value. You can see this if you have chart data for an extended period, and use the 24 Hours or Yearly views.
Likewise, even a 1-second polling interval will be represented on a chart, if the device can actually respond that fast. Every time we get new data, it goes onto the chart. I don't recommend playing with polling intervals faster than 30 seconds, though.
