My first question is: are sparse arrays (in memory, not globals) limited to 32k ?
They are limited by the process partition. You can set the maximum amount of memory a Cach� process is given through the Configuration Manager; the default is 16 MB. If your process attempts to use more than this, you'll get a <STORE> error.
Other than that, I think you'll find sparse arrays give you very interesting opportunities for OLAP :)
