Why would you want to to use a public iperf server somewhere on the internet? doesn't seem like a useful test given all the potential fail points along the way... just curious.
In the past, I have done this, actually, by spinning up an instance in AWS or Digital Ocean and running iperf on a public IP there and then pointing my local client at that address. It does seem to work, and adds the benefit you seek of guaranteeing a specific version of iperf on the server end since you're installing it yourself.
