Ever since I upgraded my iPhone 4 to iOS 5.0, I've been experiencing difficulties syncing with iTunes 10.5. I haven't made the transition to iCloud yet, primarily because my iMac is a G5 and cannot be upgraded to Snow Leopard or Lion. The Wireless Sync function doesn't seem to work, so i have been content with the old school syncing by cable method.

When I connect my phone, whatever processes that were ongoing, such as downloading new podcasts or apps, freezes. First my phone shows up under Devices, the revolving arrow begins to spin as normal, (signifying sync is progressing), and then the spinning stops, downloads stops, and my cursor becomes the spinning pizza of death (SPOD) and iTunes is frozen. I can only unfreeze iTunes by disconnecting the phone or Force Quit. Most times, reconnecting the phone simply repeats what I have described, but about every third of fourth attempt, the normal icon for my iPhone appears with the eject icon and the spinning arrow that continues to spin and actually completes the update.

Any suggestions on how to get my wired sync to proceed as it used to, without having to plug and unplug several times?
