There are buttons that say ignore, hold and answer, and switch call (or something like that). As for BT headsets, I don't know. I suspect the "phone" button does the default "hold and answer".
 
I've never met a handset that can do conference call, but typically the same button that answers would do a hold and answer, as you mentioned. The rest vary greatly. I have a headset that has no "ignore". I have another one that holding the call button for 3 seconds is an "ignore".



2.  Is there a way to add information to an already-established contact through voice commands?

Siri adds some info, like relationships and nicknames. Not sure if this applies to anything else.
 
Yes, I don't think you can add a new phone number via Siri, but you can easily say "Joe Banana is my brother" and Siri will take care of that. Alternatively, you can say "call my brother" and if you don't have one recorded, Siri will ask who your brother is. I've also noticed it learns your preference. After awhile it figured out when I call my Dad, I always use the mobile number, so it defaults to that.


3.  When I receive a text message, what is the best way to reply to it? 

Um... I don't understand the question.
 
Politely? (just kidding). I use Siri when driving, so I would imagine for her, the same answer would apply. The easiest way would be to activate Siri and say "send a text message to scott lewis saying I hope you get that new iMac for Christmas"
