In terms of data use outside the US, I bought an unlocked HSPA+ MiFi type device and use that for my iPhone / iPad data needs. So far only used it in Japan but it worked fine (prepaid SIM in Japan is a PITA and much worse to get than even here). Would also work fine in Europe or anywhere else where HSPA/GSM (UMTS) is standard. I use a Sanyo Eneloop KBC-L2 Li-Ion USB Power Supply in conjunction so I charge up the MiFi, stick it in the outer pocket of my backpack, or in my cargo pants pocket, and then use my iPhone or iPad as normal over WiFi. The Sanyo thing makes sure it last all day. I also have an unlocked UMTS capable dumb-phone which I use with a prepaid SIM for phone needs locally if I have such needs. Unless you travel a wicked lot, I would get whatever iPhone fits your local area best in terms of coverage and terms.
