I cannot delete them in iOS as they just come back next time I ply in the iPad. 
I have to go through every single unwanted app in iTunes and find it in the 
list of apps and click 'remove', then try to sync.

And ever after going through all of this and getting rid of all the spurious 
apps, I cannot get the three movies my son wants on the iPad to copy over. They 
are selected, the "video" section of the bar shows about 4GB of space, I click 
sync, and it goes through the sync in about 30 seconds and then the video 
portion of the space-used bar goes away and there are no videos copied.

I've removed the videos, resynced, deleted the videos completely out of iTunes 
and readied them, and then resynced. Nothing, including no error.

There is 18GB of free space on the iPad, so space is not an issue.

The iPad Video app shows several video, all 0 byte place holders, none 
playable, and none showing up in the iTunes UI.
