Apparently it depends on the format of the youtube video. As of yet
not all videos are encoded in H.264. Someone earlier today sent me
this information which they got from an Apple engineer (They asked to
remain unnamed):
It turns out that the iPhone _does_ detect YouTube video URLs and
redirect to the YouTube app. The catch is that not all of YouTube's
content has been converted to H.264, so if the video has been
converted and is available via the YouTube app, it will launch when
you click a YouTube link in Mobile Safari.
