Looking at the iPhone native applications it appears that Apple uses a seperate panel with a checkmark after the list item currently selected (such as the Auto-Lock time selection). It doesn't appear there is a way to duplicate this behavior. In fact that's what I think an earlier poster was looking for but I'm not sure (title is iUI - List Items with Checkmarks?).
There is a checkbox replacement (class="toggle") which I suppose could be expanded into a 3-state control (to replace 3 radio buttons) but it seems like a good idea to stick with the method that Apple uses.
