You could use SWFObject, and it will load alternative content into the
area where the Flash is supposed to be, on ANY browser that doesn't
have Flash installed.

Example:
http://aero.tamu.edu/

It may be better, though, to use the previous poster's advice, and
have a server-side script (rather than client javascript) detect the
iPhone and only serve the appropriate content. This would yield a
lighter download file size for the iPhone.
