Oops! I started hacking together my custom solution a bit too soon. Version 2: It seems you can simply put a 57x57 PNG called apple-touch- icon.png in the root of your domain, and Mobile Safari will use that instead of the scaled down screenshot. It even applies the glossy look for you.
