you've bunch of options:
as pointed on apple dev lists you can grab YUI stencils:
http://developer.yahoo.com/ypatterns/wireframes/
or simply get your iPhone SDK for yourself (requires OSX Leopard/Intel
processor):
http://developer.apple.com/iphone/program/
you would have nearly perfect iPhone simulator at your hands (and SDK
docs which already contains design guidelines with real applications
screenshots),

also: do you mean applications icons only? or entire application
screen (window) with ui elements?
