Sigh... This is an absolute PITA that forcing display of the numeric keypad isn't working anymore in 2.0. I was thinking it was a bug with the simulator until I updated my iPod Touch. As I read elsewhere, all traces of being able to customise the keypad have been erased from the SafariWebContent guide so we can only assume it's gone for good.
