In general, the apps you can launch are Phone, Mail, YouTube, iTunes,
and Maps. Look at the section "Apple Applications URL Schemes" in the
Safari Content Guidelines for iPhone
(https://developer.apple.com/webapps/docs/documentation/AppleApplications/Reference/SafariWebContent/AppleApplicationsURLSchemes/chapter_950_section_1.html).
You will need an ADC account to follow that link.

3rd party native apps can install their own URL scheme and may also be
launched from the browser but the details vary from application to
application.
