I also develop WebApps using Java and JSP.

My workaround so far has been to not use iUI itself, but only the
parts of the css and jscript I've found usefull.

The kit I'm currently using is the one found at 
http://www.bravenewcode.com/wptouch/
which is the wordpress for itouch plugin.

I've been messing with both wptouch, iui and parts i've been gathering
from apple's website and I've managed to do everything I've needed so
far.
