They only really support a subset of html5 at the moment none of the tags you mentioned above are in their supported list http://developer.apple.com/safari/library/documentation/AppleApplications/Reference/SafariHTMLRef/Articles/HTMLTags.html#//apple_ref/doc/uid/30001262 but html5 tags like <video>, <audio>, <canvas>, <source> etc do work on the iphone safari browser. A lot of these html5 tags are still in the defining stage and any implementation now would only be experimental and could change substantially in the final release of the spec.
