For web applications, or native/web hybrids you might try using java with a real rich internet platform such as icefaces.
I have serveral examples of java/dashcode integration. http://mooncatventures.com/blogs/default.aspx Also there is a plugin for IUI call quickconnect that you can get from sourceforge. I am working on a plugin for xcode which will integrate with the icefaces java framework above, but I don't know when I will have that ready. I also know some people have good success with google web toolkit. Most of these all all java, why java not php. Well if your going to do something which is very processor intensive on the backend like video distribution or advanced networking you need a platform that can handle it. Especially if you are going to do thinks like ldap authenticattion etc. Also from a security standpoint java is much more secure than objective-c or php. If you have to stay with php than your limited to html, dashcode , phonegap or iui. I tried to do video streaming with iui the results were less than encouraging.
