What age range are you targeting?  You are probably right in wanting to 
disable the URL and bottom bars, but I'm not sure that's entirely 
necessary for children.

I haven't seen any research on the subject, but I do have some personal 
experience to share.  My son was 3 when I first got the iPhone and I was 
amazed at how quickly he took to it.  Everyone is amazed at how quickly 
kids take to computers (compared to adults) but even for the same kid, I 
could see a big difference in his interaction with the computer (via the 
mouse) and the iPhone (direct touch)  Kids have small fingers and sharp 
eyes and to them the small screen doesn't seem so small.  I'm wondering 
if anyone has done any research and come up with any general results or 
guidelines for UI for small children on the iPhone.

As far as I know the scrolling technique (e.g. as used by iUI) is the 
only way of 'temporarily' hiding the URL bar.
Apple's docs for using metatags to hide URL bar and change the status 
bar are here:

The only downside to using the metatags is that you must add the app to 
the home screen using the "+" button and launch it from the home 
screen.  I'm assuming an adult could do this in advance before giving 
the phone to the child.
