You are providing way too little information about the REST service (is it providing raw data? JSON? HTML? etc) or the project requirements.
I think you should start taking decissions about what technologies you are going to use (iPhone App, iPhone Web App, framework, server, etc etc etc) and then start making much more specific questions.
