iUI uses valid HTML with a few additional attributes that might be flagged by various validators. The HTML standard says that browsers should ignore attributes that they don't understand so there should be no problems with this in the "real world" and none have been reported.

Apple doesn't seem to mind and has offered their own examples of webapps using a close clone of their interface as starting points for web projects. I do recommend creating your own theme for your site, but there has been no reported instance of Apple complaining about this issue and iUI apps have been accepted into the app store.

3. Are there any good examples of skins for this framework that look
significantly different to the iphone interface?

Try the theme switcher in the music sample:

Look at Remi's theme for Android  and Palm  Pre:

For a corporate example, make sure your user agent  says iPhone and try:
