Best you can do (and i really don't see other way to do so) is to track any interaction using some analytics tool like GA.

I'm looking to measure how much time is spent actually in my web app, both in fullscreen mode as well as a normal web page. The nature of our app lends itself to making changes here and there throughout a day or even week and I'm trying to track just how long is actually spent with the page open on the phone.
